From second choice to three-course: food waste becomes fine dining

Living in a region with abundant agricultural resources, it’s possible to take access to tasty, locally grown vegetables for granted. Unfortunately, for some of our neighbors, accessing healthy food is not so simple. Healthy Food for All (HFFA) has been partnering with local farms to capture surplus harvest to keep it out of the compost and put it on family dinner tables.

Saturday, Sept. 22, HFFA and the Farley Center for Peace, Justice and Sustainability will offer a farm based food recovery dinner presented by United Healthcare and Zters.  This unique event will provide an evening of fine dining with the pastoral backdrop of the Farley Center Farm Incubator, located just west of Verona. Guest chefs Laurel Burleson of Ugly Apple and Thony Clarke of Café Costa Rica food carts will craft creative entrees using food recovered by HFFA. Between each course, attendees will hear the story behind the ingredients and peek behind the curtain of our food system and the excess it creates.
