Upon entering the building in the North TownCenter, it is apparent there is a lot of work happening. Equipment is piled up while the work crew slathers the walls of newly hung drywall with spackle. The framework for the ceiling is in place, wires and plumbing still exposed. The bar is in production and the kitchen awaits installation for the upcoming stir and everyday banter that will happen through the exposed kitchen opening. The future should prove to be lively, the food smells, divine.

In the midst of all of this is Brian Carriveau, who along with his wife Amanda, is the owner of the new Northside community tavern called Bierock. While an unusual name, Bierock is actually the name of the centerpiece food item that will be served.

A bierock is a delicious baked pastry pocket filled with a seasoned meat mixture that is reminiscent of the many variations of portable “meat pies” found across America. Meat pies are often tied to ethnic and regional flavors and ingredients. The version that Brian and Amanda are offering is from a Volga German family recipe Amanda’s grandmother used to make. There will also be vegetarian and gluten-free bierock options, developed by Executive Chef Claudia Cody, as she brings her flare to this new Northside eatery.

“There is a lot of interest in what we are doing, and when we will be opening,” said Carriveau. “Building out new does take time, and we are excited about the progress we have been making. In working with a local firm, SketchWorks, we wanted the look of the space to be vintage with warm knotty pine walls and eclectic décor. The building contractor, Forbair, is doing a great job of driving the project forward. Ultimately, we want a welcoming space that is about craft beer, comfort food, conversation and community. We are looking toward opening in June, with both indoor and outdoor seating, and sharing a piece of our family heritage.”
